However, outlets are typically not profitable. In many hotels, catering is the only profitable component of the food & beverage department. In this session, strategies to maximize food & beverage department profitability will be discussed. These strategies will be illustrated using a case study of a food & beverage department turnaround at a Canadian hotel. |
